Cutting Board clarifies here that this does not mean it is suitable for all environments. Those who prefer to use dishwashers, for instance, will need to clean their bamboo cutting board by hand since most wood types (if not all) will still be affected due to the extreme heat they would be subjected to. Fortunately, the article also says that chefs who make a habit of wiping their bamboo board dry after washing it — without soaking — will likely be able to enjoy using it for years to come.

However, it still boasts bamboo’s natural resistance to surface scarring, leaving little opportunity for water and food particles to penetrate and give bacteria room to form. As Cutting Board points out, however, “it’s always recommended to use proper hygiene methods to clean your bamboo cutting board by using hot water and soap or a dilution of bleach and water (1 tablespoon of bleach per gallon of water).”
